Welcome to 2011

So I haven't posted in a little while, not because I wasn't cooking and eating and such, but I think I was just getting a little mopey and tired of being alone in my place and didn't want my blog to turn into a massive whining session :-) But today I am back at work, I have meetings scheduled with professors this week to get ready for classes, and school starts again on Monday! I am actually super excited about this because I feel like the semester is just filled with creative stuff happening. First semester back was to kind of ease into the habit of being a full time student again, this semester is to blow the lid off!! *Insert Rocky or Karate Kid theme song here*

No pictures today, although I have been cooking. But my potato salmon chowder while delicious, is remarkably unphotogenic. I also made a smoked salmon and roasted broccoli quiche that I sliced up and froze, and a chicken enchilada casserole with beans, chicken, diced green chilies, corn tortillas, tomatos, cheese and frozen fajita veggies (sliced bell peppers and onions basically). My freezer is just about at bursting point! I am almost done using all the ingredients in the freezer, so now I am just making more room for additional stuff I need to freeze. I REALLY hope my new roommate isn't much of a freezer user for at least the first couple weeks until I start to clear stuff out (Sorry Ethan!). But on the bright side, I think I have counted somewhere between 30-40 servings of food packaged and frozen in 1-2 portion sizes and ready to keep me eating healthy and cheap for the next 5 weeks of rehearsals.

I also made a list of New Years goals - not resolutions because that term carries to much of a loaded ideal behind it that if you make a mistake you have failed and you might as well just quit. But I made a list of 11 goals I would like to strive for in 2011 to help me with my health, fitness and financial well being

11 in '11:
  1. Eat out no more than 3 meals a week - Financially I can budget for this, and being realistic on my time issues this allows for some wiggle room
  2. Exercise at least 3 days a week - I have made a fitness plan for the first 30 days and then can reevaluate after that
  3. Write in my journal daily, even if it is just a sentence - I got this inspiration from the Own Your Beauty project, journaling makes me feel so much better throughout the day
  4. Become more skilled at my tarot readings - I have been doing tarot off and on for 11 years and I find it a great meditation tool, but I want to learn more and get more intuitive
  5. Attend at least 1 support group meeting a week (in person or online)
  6. Create a realistic budget and stick to it - I signed up for Mint.com and created a budget and activated my savings account again. Learning to live within my means!
  7. Put some money in savings every month - Even if it is $5, I want to get in the habit of saving money so I have a little cushion when unexpected things come up
  8. Set up an Etsy shop for my knitting/crochet - This is one I am going to tackle later in the year. I love knitting and crocheting and I think I could find a niche with my felted bags that would make a little extra money and give me another creative outlet.
  9. Wash my face every night - Form the habit for healthier skin while I am still relatively young
  10. Do laundry every 2 weeks - I get busy and tend to put this off for a month since I have to take my clothes to a laundromat and then it takes me 4 hours to get EVERYTHING done.
  11. Work a professional theatre summer job - My first chance to really break into my chosen profession and get a taste of what it it like. This was my plan anyway, but putting it down means I can't make excuses and work in an office instead.

I think these are realistic goals that combined will help continue to move me forward in my quest for a healthier, well rounded life. I don't like the idea of wiping the slate clean and starting from scratch every New Year. I feel like it should just be continuing to build on the foundation you have already laid. Cheers to a healthy 2011!

Holy Super Sweet Smoothie Batman!


Oh my GOODNESS!! My sweet taste buds are going wacky this morning! So I made my normal green monster smoothie with one BIG difference - I had run out of milk so I opened a can of light coconut milk and used about 1/2 a can of that alone with some water to make my smoothie. Holy moly it was amazingly good but CRAZY sweet...Honestly, when I first tried it I thought I had died and gone to heaven, but about half way through I realized that it was in fact too sweet for me. I think I am going to repeat this coconut milk experiment, but I am going to cut the amount by about half and make up the liquid with more water. It will still be super creamy, tasty and sweet, but a little lower in fat/calories/tooth aching sweetness.

On that same note - I am seriously considering going at least vegetarian and possibly vegan again. I haven't decided for sure, but there are a couple factors coming into play here for me.


1) I am poor and beans and rice and stuff are cheaper than meat
2) I am EXTREMELY opposed to industrial factory farming and for the past couple of years I have been very adamant about only eating local, organic, humanely raised meat and dairy products. However, referencing factor #1 I am no longer really able to afford those things anymore. I have caved on my principles the last couple of weeks and bought standard meat items and honestly, felt like total crap and a complete hypocrite about it.
3) I have a very sensitive stomach - I had my gallbladder removed when I was 22 and my system hasn't been the same since then. Eating a ton of animal protein just doesn't settle well with me in general, eating lower fat and lots of veggies makes me feel better on a day to day basis.
4) I have been vegetarian and vegan in the past for varying lengths of time and felt GREAT while doing it

So I haven't fully decided yet, and on a practical note I have a pound of ground beef, a pot roast and a package of chicken quarters in my freezer that I can't really afford to let go to waste. So I guess the question is, just jump in and do it? Work on phasing it out while eating meat for the next month it will take me to get through the meat in my freezer? I mean, on a practical note I eat quite a few meatless meals anyway...my lunches for this week were tortellini and broccoli salad and baked tofu with brown rice and green beans, so it's not like going meat-free is going to be a huge shock or change (however my chicken enchilada casserole would have to get altered - no more chicken, sour cream or cheese although the refried beans and collard greens and homemade salsa could stay)

Any of you who are reading this who are vegetarian/vegan or have made that switch in the past - what do you think? Any suggestions or ideas on how I should move forward?

Oh yeah - My birthday was also this past Tuesday September 14th...I am now officially 29 and on the homestretch to 30!! I celebrated by going to school, working, going to rehearsal, and then taking myself out for karaoke :-) And I am still recovering...I must be getting old, it wasn't this hard to bounce back after my 21st birthday!! It's time baby, I am almost 30...the time to be healthy has arrived and it can't wait any longer!!

The "I am totally broke and using it as a gimic" Post


Ok - So here is the deal...I am broke. Like as in, flat, crazy, $20 to my name broke until I get a paycheck in 2-3 weeks and even then most of that will have to be saved for rent and car insurance. I guess that's what comes of being a college student again and not having a job until this week. So that means I get to now figure out how to eat on $20 or less for the next 3 weeks (and in turn take these frugal lessons along with me as I continue to be a relatively poor student for the next 3 years. And let's be honest - I am studying theatre, as I continue to be a poor artist for the next 10 years!)

Things in my favor:
1) I have a relatively well stocked pantry with a few sauces, peanut butter, a couple cans of tomatoes, tons of spices, a good amount of rice and grits and pasta and tortillas, some frozen veggies, flour, basics like that.
2) I am a good cook, a confident cook, and I have an adventurous palate so eating some crazy concoctions doesn't phase me

Things going against me:
1) I have a ton of carb items and very few protein items. I have, 1 can of chickpeas, 1 tin of protein powder, 2 tubs of tofu, about 1 lb. of ground beef, 2 cans of smoked oysters and 2 cans of smoked sardines - that is is when it comes to protein for the next 3 weeks.
2) I will run out of muffins this week and I don't have any sweet potatoes on hand to make new ones
3) I will run out of bananas and milk this week for making smoothies
4) I am very limited on fresh produce and I don't have much canned or frozen as backup

So what do you think? Can I live out of my pantry without grocery shopping for the next 3 weeks? If I have to go to the store I don't want to spare more than $10 so what do you think would be the best things to get for that $10? Dried beans? Fresh fruit? Canned fruit? Frozen veggies?

I also have to make a confession - although I generally am very opposed to the industrial agricultural food system and I try to buy only organic meat and dairy products (or natural non-dairy products like almond milk and earth balance "butter"). However, I went to the store yesterday with a $10 budget and I ended up caving to my principles for the sake of cost and got store brand milk and cheap ground beef. It's not that I eat a ton of meat anyway, and I don't think I will do that again...but I have more of an appreciation now about how saying "eat organic no matter what" can seem like a very elite cry when people have to eat and they just don't have the money. That being said, I wasn't happy about eating the beef and I think I am going to go back to vegetarian if I can't afford organic and get dried beans and such instead. I just can't compromise quite that much.

Now - To launch things off, here are some pictures from my pantry cooking last night!



Dinner was an enchilada casserole made with homemade salsa, whole wheat tortillas, a mixture of ground beef, brown rice, and mashed sweet potato seasoned with cumin and chili powder, topped with 1/2 package of frozen veggies, more salsa, more tortillas and sliced cheddar cheese. Baked it at 375 for 20 minutes without the cheese and added the cheese for the last 10 minutes. I don't feel it is worth doing an official recipe for because it was yummy, but pretty basic, and nothing I would be able to repeat since it was made with just whatever was in my fridge last night :-)
I admit, it looks a little goopy when it is all served up, but it was really quite tasty! If I make it again, I will substitute black beans for the ground beef. And if I could buy whatever I wanted to add to it, I would get kale or collard greens and saute those down and add a layer too - but that doesn't fit with my current challenge so frozen veggies it is!

I also had about 5 peaches that were getting really overripe and I needed to do something with them. So I peeled and sliced them all up and tossed them with some cinnamon and ginger.


Added about a cup or so of white wine and simmered it all together for about 20 minutes until it was nice and boiled down and syrupy and super yummy!

I had about 1/2 of this mixture for dessert with one of those mini containers of Ben and Jerry's Cherry Garcia I had in the freezer and a glass of the white wine I used for simmering. Absolutely divine! The other half of the peaches is in the fridge for tonight. I have some cherries that are getting past prime in my fridge too, I might do those with red wine tonight.


So folks - I could use your input here. Any ideas, suggestions, or thoughts on ways to get through this 3 weeks and what I should spend my last $10 of grocery budget on next week would be greatly appreciated! I will try to keep you updated on how it is going and one way or another, I'm pretty sure I won't starve :-)
