Caramel Apple Weekend

Dolly Parton has her Hard Candy Christmas, I have my Caramel Apple Weekend…it’s kind of the same thing except with less singing and dancing prostitutes.  So actually, it’s not the same thing at all.  But I still think I deserve a song!

This was a whirlwind of a weekend!  So first off, how did the Herbalife go?  Well, I would say mixed (or shaken, as it were).  Honestly, I only had 1 shake all weekend and didn’t take any of my pills…whoops!  Friday night I cooked dinner for a friend, shwarma seasoned chicken, homemade faluffins (falafels baked in a mini muffin tin…delicious and adorable!), green beans, hummus and pita bread.  So then Saturday morning there was one little chicken thigh left and that became breakfast.  I did end up with a shake for lunch, which worked better than I thought.  Honestly I got really hungry, still had to round up laundry, do dishes, go shopping, all this weekender stuff and nonsense and just started worrying about what I could throw together with what I had around without even thinking about the shakes, and when I did think about them I figured I was way to hungry for a shake to be satisfying.  But I caved (mostly because I had nothing easy to make or clean to make it in) and made myself a peach cobbler Shakey Shake, drank it while I was doing stuff around the house, and it was delicious and astonishingly filled me up until dinner!  I know, I know…I was skeptical, but it worked out and so it will make it that much easier to keep transitioning to that mind set going forward.  Of course part of the thing with weekends is that I really don’t have a set schedule that makes “breakfast/lunch/dinner/snacks” a thing like it is on the weekdays.  If I am getting up around 11:30am, I am usually eating around 2pm, then maybe a snack later, but probably not much until dinner time and maybe a snack late night depending on how things go, but a third meal usually doesn’t happen and the chances of me being out are much higher.  Sometimes a shake is going to work in there, sometimes it isn’t.  But I do have the trust in them now that they can be quick, satisfying, and worth it if the other option for lunch at home is a box of mac and cheese or take out once I hit the road. 
***Peach cobbler Shakey Shake recipe – scoop of peach jam, big sprinkle of cinnamon, 2 scoops Vanilla Formula 1, carton of peach yogurt.  YUM!!!  Seriously, the good peach jam I got from the Greek market totally made this!  Tasted just like a big scoop of peach cobbler icecream or something. 

I actually did a lot of cooking this weekend.  My friend Jessica came over Saturday and I made salsa chicken (thin cut chicken breast filets, in pam, smothered in salsa, sprinkled with cheese, baked), roasted broccoli with balsamic/olive oil/Italian cheese/smoked sea salt, wild rice pilaf, and a very burned batch of cornbread mini muffins that we picked the centers out of because what wasn’t toasty was tasty :-P  I normally make cornbread from scratch, but for ease I had just picked up a box of Jiffy mix and a can of creamed corn…mix, bake, don’t burn, enjoy!  I obviously forgot one of those steps, oh well.

I also made the aforementioned Caramel Apple Tarts of heavenly delight!  They got a little crazy because I didn’t have a top crust and the caramel went EVERYWHERE – oven is going to smell like burning sugar for awhile!  But they were super tasty and I am restraining myself from just sitting down and eating the pan!  Next time there will be more apples and a top crust to contain the caramel-ly goodness, but this was a winner of a dessert.  Recipe?  Ummmmm…make a pie crust, put it in your tart pan of choice, chop up a buttload of apples, sprinkle with cinnamon sugar and lump them into the tart pans, put a glob of caramel in each one, sprinkle with more cinnamon sugar, bake at a hot temperature that seems about right for your oven (375ish for me) for about 30 minutes or until the pie crust looks golden brown.  Cool for as long as you can stand to keep out of them and then DEVOUR!!!!  I know, super scientific, right? This is why I am not a regular baker.

Sunday night was another cooking adventure.  I had bought a little package with 2 Butterfish at the store because they looked interesting, I have heard some tasty things about Butterfish, and they were only $3.  I see they have the heads on but that’s no biggie.  Of course what I DIDN'T see until I opened the package is that they also were still completely intact and had not been gutted or cleaned!  I had to laugh and think about how many of my friends would have freaked out at this, and instead I grabbed a knife and got into the good squishy stuff and then sent my dad a text thanking him for teaching me how to gut fish and not be squeamish about it when I was a wee youngin’ learning the outdoorsy ways.  Cut a deep X in the side of each of them, rubbed liberally with smoked sea salt, flower pepper and Greek oregano, dusted with whole wheat flour, and pan fried them in a cast iron skillet with searing hot coconut oil.  Took about 5-6 minutes to cook them through then I squeezed a generous half of a lemon on them and HOLY MOTHER OF YUM!!!!!!!!!!!!  Seriously, these little buggers (maybe 5-6 inches long once the heads were off) were so meaty and tasty and crispy and delicious!  I will be buying and cooking these all the times in the world because I am totally in love with them.  Plus, wild caught and small so low on the food chain = low in mercury…such a great and tasty way to get more fish into my regular diet.  Another batch of roasted broccoli, a glass of red wine, a tear jerker fest of catching up on Nashville and Glee it was a perfect Single Girl Sunday.

Had to deal with a sick doggy this weekend L Poor girl got into something that I can’t figure out and had a sad tummy all weekend (which means she also had a sad mommy who was tired of cleaning up after her because she wouldn’t tell me she needed to go out!!)  but she seems to be back to about 80% today.  Got a haircut for the first time in 12 months…I think he took off about ½ of my hair in bulk, it feels so oddly light now!  The very chic stylist also complimented my hair color and dye job, and since it comes from a $6 bottle of Garnier Fructis and my bathroom and this was a high fashion Aveda salon I felt pretty good about that…haha!  I am also way too excited about a memory foam bathmat I got that makes you feel like you are walking on clouds, and a snazzy double decker drying rack that tucks back into the corner of my TINIEST KITCHEN IN THE WORLD when not in use.  Seriously though guys, this kitchen is ridiculously small…I will share pictures at some point, but I am still learning to work around it and not drop things off my little 2 inches of ledge of prep space on one side of the sink and about 2 feet of counter on the other side.  I need a table or skinny island or something!  This will definitely be my biggest challenge to figure out how to cook well in this little bitty space.  But hey, if My Tiny Paris Kitchen and Mark Bittman can do it, so can I!

Bacon and Beer...mmmmmm...

So after Day 2 I am still feeling pretty good with this whole Herbalife thing.  Honestly, I have already spent
probably $40-$50 less on food this week than I would have and I don’t feel deprived or hungry at all so far.  Again, I am not being obsessive about what I eat when I’m NOT drinking the shakes, although because I also am focusing on keeping my digestive system happy I am not really eating a ton of junk or anything anyway, but for my main meal I am eating whatever I damn well please because falling back into disordered behaviors and thinking is WAAAAAAAAAY too easy when I start moving towards the “diet” mentality.

Anyway, yesterday was pretty easy.  Blendy shake** for breakfast tropical style with pineapple yogurt, shredded coconut, coconut milk, baby spinach, vanilla Formula 1 and water.  I snacked on some mixed nuts and tea halfway through the morning.  Lunch was a Shakey Shake** with almond butter, raspberry yogurt, coconut milk, chocolate Formula 1 and water plus I got a little cup of chicken soup (which was sadly mostly broth thanks to the noodle and chicken pirates of Au Bon Pain!!  Take your proper ratio of chunks to liquid ya jerks!!) to have something warm, and more nuts and tea in the afternoon.
(* Blendy Shake – includes greens, ice cubes, things that need a blender to combine.  **Shakey Shake – powder, liquid, maybe yogurt…can be mixed up in a shaker cup faster and on the go)

I was meeting up with a friend for dinner in the East Village, but I had about 2 hours to kill, so I walked
around for awhile and just soaked in the energy of a fall evening in the city, and then when I got cold sat down in this funky little indoor Belgian beer garden and had a YUMMY Tripel Karmeliet beer while waiting.  The best part was, because I am not holding any same or restriction around my food I was able to enjoy a beer, a salad, some French onion soup, and a very Greek diner plate of Bolognese and not feel like I had to stuff my face because it was my one food of the day, or restrict excessively because I had to be “good” (and then go home and stuff my face in hunger and frustration).  And because I am only spending money and stomach space on one “meal” a day I also have no issues making it the best and most fulfilling food I can, which is better for my body in the long run too.  Winner winner chicken dinner! (or pasta, as the case may be)

The issue came this morning actually, because I had failed to prep my Blendy Shake last night for breakfast, and I was running short on time and I only have the bottle space right now to make 1 Shakey Shake.  So whatever, if I have to substitute oatmeal and yogurt for one shake my life won’t come crashing down!  I figure it is closest to what a shake would be (and a whole lot cheaper) rather than having the shake for breakfast and going out to lunch.  But getting to work was a bitch and a half – bus was running over 20 minutes late, I got a different bus, which took me to a different train, which dropped me at a station that is twice as far away from work and doesn’t have a bus directly to the hospital.  So even though I raced to get out on time, I was still almost 30 minutes late to work and walked twice as far as normal.  Granted, it is only a mile, but I was cold and grumpy and annoyed and then I caught a whiff of the most beautiful smell in the world…
BACON!!!! 
Oh man, there is just something about the smell of bacon in the morning that is better than any other smell and better than bacon at any other time of day.  I didn't end up going and getting it, but it sure did trigger some happy and envious breakfast thoughts!


So, I am about to head into my first weekend on The Herb(alife) and trying to figure out how I am going to handle it.  I am not really telling anyone that I am doing this just because I don’t want to make it a big deal or have to explain or justify myself, or hear all the “good for you”s that I know would come and I think are wholly unnecessary and obnoxious.  Most likely I will just make good choices, try to choose light for any meals where I am with other people and not able to do a shake, and continue to not stress out over it because honeys…if you aren't enjoying your life (and the food that accompanies it) what’s the point??  Bottoms up boys and girls! Let’s make this weekend another new adventure!

Attack of the Turkey Sandwich that ate Manhattan!!!!

So here is a snapshot of my day yesterday with the Herbalife and the theatre and such:

Woke up at 7:45am – 15 minutes to get ready and get out the door for work…I had pre-prepped my shake so all I had to do was add water and blend and get on the road. 

Shake Recipe: mango yogurt, peach jam, egg, baby spinach, cinnamon, Vanilla Formula 1 Powder
Verdict: Pretty yum, but very sweet…would probably reduce the amount of peach jam


Snack at 11am – handful of mixed nuts as my tummy was getting rumbly before Lunch.  Also had a cup of the Herbalife instant tea in here at some point.  Definitely satisfying and wasn’t crazy starving or anything at any point

Lunch 1pm – Turkey sandwich, macaroni salad, cranberry sauce…finished about ¾ of the sandwich and the monster got the better of me!  I am glad I didn’t cave to my urge to also get soup…Those sandwiches are a city of meat unto themselves!

Snack at 4pm – more mixed nuts, more tea.  Honestly wasn’t terribly hungry, just wanted something munchy

Dinner at 6:30pm – Shake on my way to the theatre, also took an aloe juice to the theatre and sipped on it throughout the evening.  I like nomming on the little bits of aloe leaf, feels like a natural bubble tea!

Shake Recipe: Banana yogurt, pumpkin, egg, spinach, cinnamon, 3 dates (for natural sweetness), handful of chocolate chips, Chocolate Formula 1 powder
Verdict: Very tasty, but the chocolate chips didn’t blend well and ended up clumping and blocking the straw L probably wouldn’t use them again. 

Snacks at 11pm and 3am – so I was at the theatre for callbacks and casting discussions until after 2am, and needless to say my little shake had worn offity off!  Fortunately I brought some cheese sticks with me to the theatre, so I ate 2 cheddar cheese sticks then and made myself 2 cheese quesadillas with salsa on corn tortillas when I got home.  Probably too much cheese, should get myself some mixed nuts or fruit for home so I can have more balanced snacks like I do at work.  The sensitive lotus flower that is my stupid stomach wasn’t thrilled this morning but I don’t know what triggered it since I made so many changes all at once yesterday (Herbalife shakes, pills, aloe juice, metric fuckton of cheese, etc.)

I got home around 2:30am and had my snack, almost fell asleep in the living room, got my lazy butt in the shower, prepped my shake for the morning and got to sleep around 4am.  Do you want to know what is a very sad sight?  The notification from your phone that your alarm is set for 3 hours from that point – it made me want to cry but the life of a temp means losing 20% of my week’s pay because I want to sleep just isn’t the grown up or responsible thing to do.  So what if occasionally when typing an email I end up with a mysterious row of R’s typed across the screen where I dozed off while typing?  Caffeinate…hydrate…crash like a beast tonight.

Pantry cooking never tasted so good!

So my car was fixed for a nanosecond and then it pooted out on me again. Which means I am digging through the cabinets looking for foodstuff until I can get a ride to the grocery store again. Went through and cleaned out the fridge of all the odds and ends that I have let get a little too ripe during finals week, and decided to make myself up a yummy pantry dinner.

Curried Lentils and Brown Rice

I boiled up about 1/2 bag of dried lentils with 2 bay leaves until they were very very soft. Drained and pulled the bay leaves out and added a large can of crushed tomatoes, about 1/4 cup of leftover curry ketchup, and somewhere in the ballpark of 1 Tb. each of curry powder, garlic powder and dried cilantro and some salt to taste. Basically, start small and add until it tastes good to you :-)

In the meantime I used my tried and true method for a pot of delicious brown rice (The secret - saute the dry grains of rice in some hot olive oil until they are nice and toasty before adding water. Lots of flavor and it doesn't get too mushy!)

Spooned up half a bowl from each pot of deliciousness and INSTANT YUM!!! This probably cost me no more than about $3 for the entire big pot. 1 cup of rice from a $1 bag, about $0.75 worth of lentils, $0.99 for a can of crushed tomatoes, a few pennies for the various spices. The curry ketchup was probably the most expensive thing and the meal would be just as good without it, I just happened to have a bit left in my bottle from my birthday. I think I will toss some frozen spinach in the rest of the pot to up the veggie quota, but otherwise this is about as perfect a winter dinner as it gets! Add a glass of white wine and some old episodes of Star Trek Voyager and I am a happy girl this Friday night.

I am the disappearing blogger evidently!

So theatre - it Is wonderful for giving me a sense of fulfillment and joy about pursing my dreams in life. Not so great for keeping up to date on a blog!
I was assistant stage manager for a show called Romantic Fools - which was hilarious, awesome, fun and a joy to work on. A sketch comedy type of show all about the absurdities of love, romance, sex and relationships. But it also meant that between classes/work/rehearsals/shows I was spending just about every day at school from 8am-10pm. And considering this is a food blog and I was eating an inordinate amount of ramen noodles and fast food burritos, also less than thrilling for updates. But...I'm baaaaaaaaack! And will try to ramp it back up a bit, at least until the next show starts :-)

That also means I will try to start posting more pictures again...promise! In the meantime - some updates and a recipe or two.

1) Very exciting news...I got foodstamps!!! Hooray!! That means my approximately $30/month budget for groceries has been tripled...I still have to work around a budget because $120/month which is still lower than I was used to before, but with eating healthy, cooking more from scratch and going vegetarian I can definitely do it. It also means that I can go back to buying certain things that I was morally and healthfully struggling with because I couldn't afford it - things like almond/soy milk instead of dairy milk, organic cheese, organic eggs, organic produce, leave the ramen behind! Because I am not using my foodstamps to buy a ton of junk like soda, chips, cookies, cereal, etc. I can afford to spend a bit more on organic, high quality of what I do buy.
2) Also because I have food stamps now and I don't have to watch literally every single penny at the grocery store, I decided to go ahead and take the vegetarian plunge again right now. The meat still in my freezer can stay there until I want to use it for friends or my dog or something. As of Sunday I haven't had any meat and feeling damn good about it! I have decided I am not going to stress over being vegan just yet, although I have continued to drastically reduce my dairy consumption and anything I do buy I am committed to getting from organic, humane, sustainable sources. I may make the vegan transition at some point, but honestly I just don't like hummus that much and my bagel and cream cheese is an easy on the go breakfast for rushed school mornings when I don't have time to blend a smoothie!

2) One of the things I loved most when the show was over was being able to go back into my kitchen and cook for myself without feeling like I had to run back out the door in 15 minutes. The first thing I made was a batch of peanut butter cookies for the cast party...and they were successful! I made 3 dozen and they were devoured in less than an hour (with the director himself polishing off about 6 of them!) So yeah, I got to have a cookie and enjoy baking and share the rest so I don't have them sitting around tempting me all week. The second thing I made was jello shots (also for the cast party!). Ok ok, maybe not really COOKING persay - but they were even more successful than the cookies! I will let you in on the secret of the world's most amazing grown up jello shots shortly ;-)
3) On the vegetarian side of things, I made a killer pot of veggie chili on Sunday afternoon! I have been making chili for others for awhile, so I tend to stick to a pretty simple meat/beans/tomatoes recipe...but for myself I decided to PUMP IT UP! I ended up with (ready for it?) onions, garlic, bell peppers, green beans, peas, corn, zucchini, mushrooms, tomatoes, carrots black beans and kidney beans! I added in some cooked elbow macaroni to make it chili mac and topped with a little shredded cheddar and some sliced avocado. Holy YUM! Made lots too, I put 2 containers in the freezer and 1 in the fridge for lunches. I don't really use much of a recipe but here is what I did for anyone who would like to try your own variation:
* Sautee 1 onion (diced) for 1-2 minutes in olive oil until translucent.
* Add all diced fresh veggies you are using (mushrooms, bell peppers, garlic, celery, etc.) and cook until tender
* add any extra frozen veggies you have sitting around that you want to use up (green beans, corn, peas and carrots, etc.)
* add 1 large can of diced tomatoes, and 1 large can of crushed tomatoes, 1 can of black beans, 1 can of kidney beans, and 1 bottle of beer to the pot and stir everything together well
* season with chili powder, cumin, salt, red pepper and oregano (and if you are feeling CRAZY a dash of cinnamon!) to taste
* simmer for 30 minutes to allow all the flavors to combine well
* while the chili is simmering, cook a box of elbow macaroni until tender, drain and add to the
chili.
* serve with tortilla chips, avocado, and/or shredded cheese as you like!

4) Fitness! Because this blog is also about me getting HEALTHY I wanted to let you know that I have begun going to the gym...hooray! I started the week before the show and went for 30-45 minutes every day. Then the week of the show happened and I felt like I had been run over by a truck, so I decided rest and sanity were more important and took a week pause. But, rather than let that throw me off schedule, I am back again this week and feeling great!

Let me share my planned fitness program with you so I can stay accountable -
M/W/F I have 35 minutes between classes to exercise - so I will be doing the Couch to 5K running program to work myself back up to running condition (maybe I will be able to finally tackle that Disney World half marathon in 2012??). It is fairly high intensity, I can push myself, and it is done in 30 minutes plus some stretches.

T/Th I have an hour between classes to exercise - so I will be doing a 15 minute cardio warmup and then 30 minutes of the Shape "Best Body" strength training workout using resistance bands, and then 15 minutes of additional abs work and stretching
Sa/Su I will pick one of the days that is the most free and do a repeat of my 1 hour T/Th cardio/strength/abs workout and one day will be purely rest.

This is a total of 4 1/2 hours of exercise a week - add in the 2-3 hours a week that I am riding my back back and forth to school and around campus and that makes 6-7 hours a week of exercise or almost an hour a day. Very doable and great for fitness and hopefully some weight loss! The other thing I like about this program is that it is doing it in decent chunks of time that I have available...I know I have a hard time going to the gym at 5pm after work when I really want to go home and get dinner and see my dog. So if I only have 1/2 hour to workout between classes but I know that I will DEFINITELY DO that 1/2 hour, that is more valuable than having an hour scheduled every evening that 50% of the time or more I don't follow through on.

Yummy Yummy In My Tummy



So I made a recipe last night that I found on Eating Bird Food for homemade, sugar free apple butter. Now, my sugar free muffins were not super successful. I actually have had a hard time eating them because they just are too dry. But I am not one to be wasteful, and I thought apple butter sounded like about the perfect thing to make with my 5 lb. bag of apples to spice up my muffins and have around for awesomeness!
Here is the recipe straight from Eating Bird Food
(with the changes I made starred ***)
Healthy Homemade Apple Butter (no sugar added)
10 medium sized apples (choose a sweet variety like Red Delicious or Gala)
***I used about 13 apples, the entire 5 lb. bag because they were pretty small
2 cups of unsweetened apple juice or approximately 5 apples juiced
***I used no sugar added 100% apple juice
1/4 cup water
***I added this, but would probably leave it out next time...just seemed a little too liquidy and if it needs more moisture I would go with more juice
1/4 cup apple cider vinegar
1 T cinnamon
1/4 t ground cloves
1/4 t ground nutmeg
***I used about 1 Tb (give or take) of pumpkin pie seasoning and tossed a whole cinnamon stick in the crockpot while it was cooking for seasoning...I like the ginger flavor that it adds.
1/2 t pure vanilla extract
pinch of sea salt

Prep:
1. Place cored and sliced apples (not peeled) into a large crock-pot / slow cooker.
2. Juice apples and pour juice on top of sliced apples. Add water, apple cider vinegar and spices. Stir all ingredients together, cover pot and let it cook for 15 hours on low.
3. The liquid will reduce and the apples will be very soft, darker in color, and smell lovely. Turn the crock pot off and let the apples cool down a bit (about 30 minutes), then transfer the mixture into a blender (or use a hand/stick blender) and blend until completely smooth.
4. Let the apple butter cool and then transfer into storage containers. It should store well in the fridge for about 3 weeks.
***I ended up getting a peanut butter jar, a marinated artichoke jar, and an Earth Balance tub full of apple butter (hooray for reusing containers!) I am keeping the peanut butter jar in the fridge to use over the next 3 weeks and I froze the other 2 containers to take out when I finish off the first one. And I am TOTALLY making another batch of this and getting pretty little jars and giving it away with batches of homemade muffins for Christmas!


I made a peanut butter & apple butter (pb&ab) sandwich to go with my leftover chili for lunch today, and brought another little tub to go with a muffin for an afternoon snack. It is just yummy! No sugar, no sweeteners so I like it even better than jam. And it can't get much cheaper to make for how much you get! ($3 for a bag of apples, $2 for a jug of juice that I froze the rest to use next time, $1 for a jar of vinegar that I was buying anyway for my hair and face). Definitely in love with this stuff...try it this weekend, you will be happy you did!




Other variations I would love to try are apple/pear and apple/pumpkin. Can you think of other variations that would be good? Let me know!

Oh yeah, and anyone who reads this blog who I may be giving a Christmas gift to...you will forget everything you just read :-)

Cha-cha-cha-changes!

So I have decided that it is time to start moving back towards a more environmentally healthy lifestyle in addition to a personally healthy lifestyle. I was very active a couple of years ago about reducing my consumption of goods, cooking a lot more, cutting back my meat intake, and just generally living a more concientious life. Now that I am watching my budget so intensely I have also started re-educating myself on the value of a simpler life for both my own personal health and the health and wellness of the planet!

If you haven't watched The Story of Stuff yet please take the 20 minutes and watch it now...it is a fascinating, entertaining and eye opening piece about consumption in our society and how we can make a difference.


Now...I promise I won't go all preachy on you :-) That's not my style! But what I do want to do is share some of the changes I am making, contemplating and planning in the near future.
  1. I am going to go vegetarian and cut out most dairy - I personally abhor the industrial agricultural system. I think it horrifically abuses animals, introduces far too many antibiotics and pesticides into our food system, and pollutes the environment. (Watch Food, Inc. if you haven't yet for more info on this!) I am not opposed to eating meat, but I do feel that the meat, dairy and eggs should come from local, humane, small farm operations. However, that is expensive and I just don't have the budget for it on a regular basis. So I am going back to an idea that meat is for special occasions and maybe once a month or so treat myself to an organic chicken or roast and savor it and use every bit of it I can. The rest of the time, vegetarian with some local eggs but no dairy because it really seems to not settle well with my system and it is waaaaaay too easy for me to go wacky on cheese!
  2. I am going to try not to buy anything that I don't need, and anything I do need I will attempt to find used at thrift stores, on Freecycle or will make them. I have my basic items already in place. Smoe "nice to have" things like a bookcase, bathroom rug, living room table, glass jars, etc. I can try to find on Freecycle or in a thriftstore and things like washcloths or new fashion scarfs I have BAGS full of yarn in my closet and I can knit or crochet myself! But by doing my part to avoid introducing new items into the system I will save money and the environment.
  3. Ok, now this one may sound a little weird - but I am giving up shampoo. I have done a LOT of research on this as I was coming to the end of my shampoo bottle. Shampoo is simply not necessary for healthy, CLEAN hair! Modern shampoo is actually more of a detergent that strips your hair of the healthy oils it needs which then have to be replaced with other products. By going shampoo free and cleaning your hair once or twice a week with a baking soda/water mixture and then following with an apple cider vinegar/water rinse your hair not only won't get greasy and disgusting, it will actually get healthier and more manageable. So, I am embarking on a 1 month experiment to see how it goes...so far 3 days in all I have done to my hair is do a good warm water rinse with a scalp massage to loosen up any dirt and such and honestly, my hair looks great! All the product is out of it, it doesn't look greasy at all, it is holding a style without any fuss, and my hair color doesn't seem to be fading as fast as normal. They say it takes from 2-6 weeks for your hair to really adjust and not overproduce oil to make up for being stripped by the shampoo, so let's see how it goes!

Now, in the meantime while I am slowly transitioning to vegetarian I decided I just can't be wasteful and throw out or give away the meat I already have in my freezer so I am cooking it, one piece a week, and using it for dinners. So I have to share the AMAZING beef roast/stew I made in my crockpot this weekend!!

Again, not much on an official recipe, but I had a 2 lb. beef chuck roast that I put in a crockpot along with a bag of baby carrots, about 6 chopped up potatoes, 2 chopped onions, 1/2 bottle of red wine, about 2 cups of water and seasoned with rosemary, garlic and (the secret ingredient) 3 cinnamon sticks. Cooked on high for about 6 hrs - could do it on low too for 8-9 hrs, but I started it late in the day. Holy Cow was this amazing!!! The cinnamon was unexpected but really made it pop!! I took the roast out, shredded it, put the potatoes and carrots in another container and will eat on it for dinners all week with the broth to make it a stew.

Lunch Ideas

So the ever fantabulous Fed Up With Lunch has a guest post today from Rachel who talks about packing her own lunches when she was in high school. She posted some awesome links with great ideas for a variety of lunches to pack, and of course anything that works well in high school (or elementary school for that matter!) works well in college. Now, some of the suggestions aren't aimed at me...for example, I don't need to cut my sandwiches in silly bear and star shapes to convince myself to eat them! But some of them are great new ideas for different sandwiches, or even totally new ideas that I can use (I am going to ROCK me some pizza quesadillas at some point).

So culled from the links that Rachel posted, here are a few of my favorites - Hope they help others out as much as they are going to help me :-)

15 Fresh Brown Bag Lunch Ideas ***Note from Tina - I am not putting all 15 in here, I am just putting in the ones I think will work best for me. Feel free to check out the link for the other ideas!***
  • Pasta Lover's Lunch Salad. Pack a cold pasta salad and a plastic fork, and your pasta lover will love you, too! Make your salad with lean meat or low-fat cheese (so it has some protein), lots of vegetables to boost fiber and nutrition, and use a whole-grain blend pasta, like Barilla Plus. Then just drizzle some light vinaigrette over the top and toss. ***Yeah! I love this idea and used to do it all the time...time to get back to it!***
  • The Fruit and Cheese Plate Special. Make crispy cracker sandwiches with whole-wheat crackers, slices of assorted cheese, and lean meats. Don't forget the fruit, which goes nicely with the cheese and adds fiber and nutrition. ***I am not a big fan of lunch meat, but doing this with slices of baked tofu sounds awesome***
  • Bagel With Cream Cheese, Please. Bagels are a wonderful foundation for hardy sandwiches that stand up to being in a backpack or locker all morning. You can toast a bagel in the morning and simply spread some light cream cheese in the middle. Or make a bagel sandwich with, say, a little light cream cheese, some turkey, and cranberry sauce, then top it off with alfalfa sprouts or Romaine lettuce. ***This is actually great, especially for when I need dinner at the theatre because after getting tossed around my bag all day sandwiches on bread tend to get a bit too goopy for me***
  • Carry a Cobb Salad. Plastic containers can hold the makings of a delicious salad lunch. Fill it with chopped green lettuce, chopped hard-boiled egg, light cheese, and/or lean ham. You can buy packets of light dressing, or just use extra packets of light salad dressing left over from your last trip to the fast-food chain. ***This would be a decent idea on the days when I can eat lunch at work...on days when I have 10 minutes to get from class to class, not so much***
  • It's a Wrap! Wraps are a nice change of pace from the usual sandwich. Use one of the new higher-fiber tortillas, like the multigrain flour tortillas available in most supermarkets. Then fill 'er up with chicken Caesar salad or assorted lean meats, cheese, tomato, sliced onion, shredded Romaine lettuce, and light dressing. Just roll it up and wrap in foil. ***Same plusses as the bagel sandwich***
  • Noodle Soup Cups. Many schools offer a hot water dispenser so kids can add hot water to packaged noodle soup cups. Some brands are higher in sodium and fat, and lower in fiber than others. Check out the options in stores like Whole Foods or Trader Joe's. ***I have these awesome noodle soup packets from Thai Kitchen that I am thinking doing in a thermos in the morning...would need something else to bulk it up though, just a noodle cup is a little flimsy on staying power***
  • Veggie Sushi. Not all kids will go for this one, but there are some out there who really like seaweed-wrapped sushi rolls. You can now buy pre-made sushi at many supermarkets, too. Choosing the veggie-filled sushi means there's no chance the sushi will get a little "fishy" while it's in your kid's backpack. ***I would LOVE to do this if I could find the seaweed cheaply...I could see making these the night before and having them ready for lunch the next day, and doing it veggie style also keeps the cost down***
  • Toss Some Taco Salad. If taco salad is a favorite, you can pack the meat mixture tossed with the shredded cheese, tomatoes, and chopped Romaine lettuce in a plastic container. At lunchtime, your child can add crunchy, reduced-fat tortilla chips and a little light dressing. ***I am a TOTAL sucker for taco salad! Same issue as the cobb salad, but I would totally bring this to much on at work***
  • Fried Rice Can Be Fun. When made with eggs or chopped lean ham and lots of veggies, cold fried rice can be a satisfying noontime treat. Make your own, or plan on leftovers the night before if you're ordering from a restaurant. ***Definitely doing this...easy, quick, uses leftovers...perfect!***
  • Talk About Taquitos. I started doing this last year, and it seems to have stuck with my girls. I pop some Bean and Cheese frozen Taquitos from Whole Foods into my toaster oven in the morning, then let them cool. Then, I wrap them in foil and make sure they stay cool by packing a frozen juice box or small water bottle. By noon, they are cold, fun finger food. ***So I wouldn't buy frozen taquitos...but replace that with homemade and preheated bean burrito and you are speaking my language!***
  • Meal Muffins. Certain types of muffins work as a lunch entree. If you bake them over the weekend and keep them in the freezer, you just have to pull one or two out in the morning. By lunch, they are nicely chilled and ready to eat. Try ham and cheese muffins, Mexican Cornbread muffins, or quiche muffins (quiche filling, baked with or without crust in a muffin pan). ***YES YES YES!! When I was a South Beacher I made tons of the mini quiches with egg, spinach and cheese...so easy to grab and go***

Vegan Lunch Ideas ***I would probaby make some of these vegetarian instead of vegan since my budget just doesn't allow for soy cheese or yogurt, but otherwise this is such a great list to get the mind going! I have starred the ones that I especially am going to remember***

Sandwiches:

Peanut butter and jelly
Peanut butter and apple or banana slices
***Peanut butter and grated carrots
Nut butter sandwiches on small crackers
Nut butter and jelly on a whole grain bagel
Peanut butter with sliced bananas rolled up inside a flour tortilla

2 Fun Lunch Recipes

The first is a high energy peanut butter ball that would make a great grab and go lunch or snack item when around campus. The second just sounds yummy and fun!

Peanut Butter Bites

1 cup peanut butter (creamy or crunchy)

1/2 cup nonfat dry milk powder

1/2 cup raisins (or other dried fruit chopped small)

1/4 cup honey

Graham cracker crumbs (or crushed nuts, or shredded coconut, or mini chocolate chips, etc.)

In a large bowl, mix all the ingredients except the graham cracker crumbs. Shape the mixture into 1-inch balls. Roll in the crumbs and refrigerate. Makes 24.

Pizza Quesadillas

Place a flour tortilla in a nonstick skillet over low heat, spread it with tomato sauce, and sprinkle it with grated cheese, shredded meat, chopped vegetables and other fillings. Top it with another tortilla and cook it like a grilled cheese. When it has cooled, slice it like a pizza and pack it up!

The "I am totally broke and using it as a gimic" Post


Ok - So here is the deal...I am broke. Like as in, flat, crazy, $20 to my name broke until I get a paycheck in 2-3 weeks and even then most of that will have to be saved for rent and car insurance. I guess that's what comes of being a college student again and not having a job until this week. So that means I get to now figure out how to eat on $20 or less for the next 3 weeks (and in turn take these frugal lessons along with me as I continue to be a relatively poor student for the next 3 years. And let's be honest - I am studying theatre, as I continue to be a poor artist for the next 10 years!)

Things in my favor:
1) I have a relatively well stocked pantry with a few sauces, peanut butter, a couple cans of tomatoes, tons of spices, a good amount of rice and grits and pasta and tortillas, some frozen veggies, flour, basics like that.
2) I am a good cook, a confident cook, and I have an adventurous palate so eating some crazy concoctions doesn't phase me

Things going against me:
1) I have a ton of carb items and very few protein items. I have, 1 can of chickpeas, 1 tin of protein powder, 2 tubs of tofu, about 1 lb. of ground beef, 2 cans of smoked oysters and 2 cans of smoked sardines - that is is when it comes to protein for the next 3 weeks.
2) I will run out of muffins this week and I don't have any sweet potatoes on hand to make new ones
3) I will run out of bananas and milk this week for making smoothies
4) I am very limited on fresh produce and I don't have much canned or frozen as backup

So what do you think? Can I live out of my pantry without grocery shopping for the next 3 weeks? If I have to go to the store I don't want to spare more than $10 so what do you think would be the best things to get for that $10? Dried beans? Fresh fruit? Canned fruit? Frozen veggies?

I also have to make a confession - although I generally am very opposed to the industrial agricultural food system and I try to buy only organic meat and dairy products (or natural non-dairy products like almond milk and earth balance "butter"). However, I went to the store yesterday with a $10 budget and I ended up caving to my principles for the sake of cost and got store brand milk and cheap ground beef. It's not that I eat a ton of meat anyway, and I don't think I will do that again...but I have more of an appreciation now about how saying "eat organic no matter what" can seem like a very elite cry when people have to eat and they just don't have the money. That being said, I wasn't happy about eating the beef and I think I am going to go back to vegetarian if I can't afford organic and get dried beans and such instead. I just can't compromise quite that much.

Now - To launch things off, here are some pictures from my pantry cooking last night!



Dinner was an enchilada casserole made with homemade salsa, whole wheat tortillas, a mixture of ground beef, brown rice, and mashed sweet potato seasoned with cumin and chili powder, topped with 1/2 package of frozen veggies, more salsa, more tortillas and sliced cheddar cheese. Baked it at 375 for 20 minutes without the cheese and added the cheese for the last 10 minutes. I don't feel it is worth doing an official recipe for because it was yummy, but pretty basic, and nothing I would be able to repeat since it was made with just whatever was in my fridge last night :-)
I admit, it looks a little goopy when it is all served up, but it was really quite tasty! If I make it again, I will substitute black beans for the ground beef. And if I could buy whatever I wanted to add to it, I would get kale or collard greens and saute those down and add a layer too - but that doesn't fit with my current challenge so frozen veggies it is!

I also had about 5 peaches that were getting really overripe and I needed to do something with them. So I peeled and sliced them all up and tossed them with some cinnamon and ginger.


Added about a cup or so of white wine and simmered it all together for about 20 minutes until it was nice and boiled down and syrupy and super yummy!

I had about 1/2 of this mixture for dessert with one of those mini containers of Ben and Jerry's Cherry Garcia I had in the freezer and a glass of the white wine I used for simmering. Absolutely divine! The other half of the peaches is in the fridge for tonight. I have some cherries that are getting past prime in my fridge too, I might do those with red wine tonight.


So folks - I could use your input here. Any ideas, suggestions, or thoughts on ways to get through this 3 weeks and what I should spend my last $10 of grocery budget on next week would be greatly appreciated! I will try to keep you updated on how it is going and one way or another, I'm pretty sure I won't starve :-)

Pumpkin (or sweet potato) Muffin Recipe


Ingredients

  • 2 1/2 cups whole wheat flour
  • 1 cup white sugar (I used organic)
  • 1 teaspoons baking powder
  • 1 teaspoons baking soda
  • 1 teaspoons salt
  • 1 teaspoons nutmeg
  • 1 teaspoons cinnamon
  • 1 teaspoons ground cloves
  • NOTE - In place of the 3 above spices you can use 2 tsp. pumpkin pie spice
  • 3 eggs (If you wanted to veganize I recommend using a combination of vegan replacers like flax seed, bananas or Ener-G)
  • 1 (15 ounce) can pumpkin OR 2-3 baked sweet potatoes, mashed to get approx. 2 cups
  • 1/2 cup unsweetened applesauce
  • 1/2 cup raisins or dried cranberries
  • 1/2 cup chopped walnuts or almonds

Directions

  1. Preheat oven to 350 degrees F (175 C). Grease two 12 cup muffin pans, or line with paper muffin liners. Soak cranberries in hot water for ten minutes to plump, then drain.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, nutmeg, cinnamon, and ground cloves. In a separate bowl, mix the eggs, pumpkin, and applesauce, until smooth. Add this mixture to the dry ingredients and stir thoroughly to make a smooth batter. Stir the cranberries and almonds into the batter. Spoon batter into the prepared muffin cups to 3/4 full.
  3. Bake for 30 to 35 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.
  4. Makes 16 muffins

These muffins are DELICIOUS! Sweet, but not overly so, dense but not heavy, not oily or greasy at all because there is no added fat, yummy burst of cranberry goodness throughout...the perfect thing to grab for breakfast with my smoothie in the morning instead of toast. I made 16 and I am refrigerating half and freezing the other half. And of course, because I am always thinking of ways to make additions, I may add some orange zest in with this next time...I bet the flavor would really add a lot!

Now I normally am not too fussy about the nutrition info or tracking calories religiously, but I was curious to see what the nutrition info was on this recipe because I did alter it from another recipe using different measurements of nuts and fruit, switching whole wheat flour for all purpose and cutting the sugar in half (because I don't want my breakfast muffins to taste like cupcakes!) and I was pleasantly surprised. If you make 16 muffins from this recipe each muffin comes out to about 175 calories, 3 g of fat, 3.5 grams of fiber and almost 5 grams of protein. Not to bad if you ask me! I included the full breakdown below if you are interested. I got this from entering the recipe into Spark People's recipe calculator which is a very handy tool.

Biking and Cooking

So - This whole riding my bike back and forth to school thing may possibly kill me before it gets me in shape! Ok, maybe not, but going from basic couch potato all summer (with one good 9 mile hike) to riding my bike all around campus does feel pretty intense and was definitely feeling more tired on the ride this morning than I did yesterday. I am taking it slow, not pushing myself, taking rests when I need to, and just knowing that if I keep it up it WILL get easier and I WILL get in better shape before I even realize it :-) In the meantime though...even with a padded seat (and a padded rear) my backside hurts! I just keep telling myself that I will get used to it and it is only day 2. And honestly, the good feelings, the exercise, the endorphins, the cured insomnia and the flexibility to get around campus without looking for parking is worth the trade off so I will keep the whining to a minimum.

So - I promised recipes yesterday and today I shall deliver! And both are vegetarian and I will note the easy substitution to make it vegan.

Granola:
I LOVE making granola...it is so cheap, you can make it much lower fat and lower sugar than the stuff you buy in a box or bag, and you can add whatever you want to it! I see that Bear Naked granola selling for $7 a bag and it makes my head hurt because I could make the same amount of granola for about $2 and it tastes even better.

So here is the basic recipe:
2 1/2 cups old fashioned oats
2/3 cup honey (or agave nectar to make it vegan)
1/3 cup nut butter or oil (choose your favorite nut butter, peanut, almond, sunflower, cashew...it all good!)
1 Tb. vanilla
1 tsp. cinnamon or pumpkin pie spice
1/2 cup nuts
1/2 cup seeds
1/2 cup dried fruit

-Spread the oats out on an ungreased baking sheet and toast in a 350 degree oven for 5-10 minutes stirring often and watching carefully to make sure they toast, not burn.
-While the oats are toasting in the oven, in a small pan on the stove bring the honey, nut butter and vanilla just to a simmer so it all melts together and remove it from the heat.
-Once the oats are toasted transfer them to a large mixing bowl and add the cinnamon, nuts, seeds and dried fruit and mix well.
-Pour the honey/nut butter mixture in with the oats and mix well so that the oats are all moist.
-Spray your baking sheet with cooking spray and spread the mixture evenly over the pan and return to the oven
***At this point I usually just turn the oven off and let the granola sit in the cooling oven for a couple of hours or overnight to crisp up. You could also turn the oven down to 250 degrees and let it bake for 30-45 minutes, stirring often until it is toasty. I think leaving it overnight is easier, less chance of burning it on accident, and then it is crunchy and ready for breakfast in the morning!***

Now, that is the basic recipe and it is endlessly customizable to your taste and depending on what you have in your cabinets. Almonds, cashews, peanuts, pecans, walnuts, sunflower seeds, pumpkin seeds, dried mango, dried apples, dried cherries, dried cranberries, grated coconut, chocolate chips, orange extract, almond extract, flax seeds, anything and everything you can think of would taste GREAT in this. You can even cut the honey in half if you want it to be a little less sweet and I find it is still enough stickiness to hold the granola together well. As an example, for my most recent batch I didn't have any peanut butter or seeds in the house but I wanted granola so I used 1/3 cup honey, 1/3 cup Earth Balance spread, and vanilla extract for the liquid. Oats, pumpkin pie spice, cocoa roasted almonds, orange flavored cranberries and unsweetened coconut for the granola base and it is totally AMAZING. Not overly sweet, tons of flavor, perfect to mix into my plain yogurt with an extra drizzle of honey. So try it out, use your imagination...it is a very easy, quick recipe and will make tasty granola for pennies of what you would pay in the store.

Smoothie:
I am also making a smoothie every morning as my breakfast because it is easy to make and I can put it in a water bottle to take to school and drink during my 8am class. I absolutely love my smoothies so I wanted to share that recipe too.

Tina Version of a Green Monster Smoothie-
- 1 scoop protein powder (I use unsweetened chocolate flavor)
- 1 Tb. ground flax seed
-1/2 frozen banana
-handful of frozen fruit
- approx. 1/2-1 cup frozen spinach (to taste)
-2 Tb. 100% pineapple juice frozen concentrate
- 2 dashes cinnamon
-1 cup almond milk
- water as needed for consistency

I just put all of this into my blender and blend away until it is smooth and green and yummy! You don't really taste the spinach but it is a great boost of veggies and nutrients in the morning. The pineapple juice concentrate adds some natural sweetness. I add a little extra water if it is feeling too thick with just the 1 cup of liquid from the almond milk, you could also use more almond milk but I like my carton to last the week and a little water really doesn't change the flavor. Super yummy, super filling, super natural energy!

So that is my morning recipes right now. I apologize for there being no pictures, I was in a rush this morning and forgot to take any. I will try to update this post later to include some pictures so you can see my granola and green goodness and a picture of the Blue Bomber Bicycle that is transporting me every so faithfully around campus and kicking my butt into shape!
